Pan fried Scallops

Today for Sunday lunch I made something very simple but very delicious.

I used a 300 gram bag of Scallops  which I lightly pan fried in a very tiny amount of coconut oil, then once cooked I just sprinkled them freshly cut garlic chives and a grind or two of rock salt. Served with 1/4 of a cup of cooked white rice and a salad, it was a gorgeous lite meal with high protein and low carbs plus  it was so quick. Here is the breakdown of the meal -   Protein  35 grams grams   - Carbs 20gram   Fat 3grams  which total 300 calorie meal
